Cooking started the same way. I'd follow a recipe, it would fail, and I'd have no idea why. "Proof until doubled" — but what if my kitchen is cold? "Use bread flour" — but which one? They're all different.
So I started measuring. Testing. Documenting. I bought a refractometer for espresso. I tracked fermentation times at different temperatures. I learned about W values and hydration percentages.
Suddenly, cooking became predictable. Not boring — predictable. I could adjust recipes with confidence. I could troubleshoot failures. I could actually improve instead of just hoping for the best.
